       As is well known, soybean oil is one of the most produced edible oils in the world and also one of the common edible oils in our daily life. The soybean oil we commonly see in supermarkets will have prompts such as Grade one and grade two on its packaging. What are the differences between grade one and grade two oil?


       According to national standards, soybean oil is classified into four grades: Grade One, Grade Two, Grade Three and Grade Four. These grades are mainly classified based on the refining degree, color, odor and taste, as well as physical and chemical indicators such as acid value and peroxide value of soybean oil.


       Soybean oil of different grades has different application scenarios in cooking and food processing. The specific characteristics and applicable scenarios of each grade are as follows:

       Grade 3 soybean oil ‌ : LOWER degree of refinement, DARKER color, may be brownish red, lower transparency, higher acid value, smoke point not specified. It retains more of its natural ingredients such as carotene and vitamin E, but may contain more impurities and is suitable for cold cooking or eating directly ‌.


       Overall, first and second-grade soybean oil, due to its high quality and purity, is often used in high-end cooking and fine food processing. Grade three soybean oil is suitable for high-temperature cooking methods such as frying in daily home cooking. Grade four soybean oil, on the other hand, is more commonly used in the industrial field.


       After being processed by refining equipment, soybean oil has removed most of the impurities in the oil, improved its quality and color, and extended its storage time. Each batch of refined soybean oil undergoes random inspection and testing. Only when the test results meet the quality grade standards can it be sent to the next workshop for filling and sealing, waiting to be sent to the market. If the test results are not qualified, it needs to be returned to the refining process for reprocessing.
